should not be plated or coated. The reason they dont rust is that they rapidly form thin layer of corrosion, called a "passive layer". That layer, when in tact, prevents further corrosion. If you do polish them you must use a fine grit and polish them as evenly as you can. If you do not have an even passive layer reform you can actually make them rust. The main thing to keep in mind is that they have about 1/3 of the strength of a similar SAE grade 5 screw for example, keep that in mind if you ever need to torque one.
